Happy Turkey Day everyone.
This year we are miles and miles away from home. So it's just the two of us. We bought all the fixings, I planned a menu for two, and I dug out all the holiday recipes.
BAM. I am sick. Like a dog sick. Like not even wanting to roll off the couch sick. So as I am typing the hubby is in the kitchen playing in my brand new pots and pans making my favorite holiday happen. I do love that man.
I haven't even turned on the computer until now. I am so tired. UGH! And to make things worse, I have to get up and go to the office tomorrow. Someone stick a fork in me, I am done.
I am off to cuddle back in the covers. I hope everyone has eaten some great food, visited with family and friends, and gets their game on.

Easy Sweet Potato Casserole
This tasty sweet potato casserole contains butter, vanilla, mashed sweet potatoes, brown sugar, butter, and pecans.
- 2 eggs
- 1 cup granulated sugar
- 3/4 cup butter, softened
- 1/2 cup milk
- 1 teaspoon vanilla
- 3 cups cooked mashed sweet potatoes
- 1/2 cup brown sugar
- 1/3 cup flour
- 2 tablespoons butter, softened
- 1/2 cup chopped pecans
Beat eggs, granulated sugar, and 3/4 cup butter. Add milk and vanilla. Combine with the mashed sweet potatoes; spoon into a greased 2-quart casserole. Combine brown sugar, flour, 2 tablespoons softened butter, and pecans, mixing until crumbly; sprinkle over sweet potatoes.
